The JetBoil system is excellent. Like all systems, you have to know it's quirks. Most Isobutane-type systems don't work well in colder weather, so don't expect this to be the exception. DIfferent stoves for different applications. You wouldn't drive a backhoe in the Daytona 500 and complain that it's not fast enough.
I've cooked rice in my PCS several times and it was great. You can get the stove to simmer, you just have to practice. It's more controllable than a Whisperlight or XGK or Pocket Rocket, but can't do what those do, either.
The smaller canister fuel fits into the PCS, so it's great for short trips and compact travel. The larger canister will fit into the GCS (1.5 liter pot), so make your choice based on usage. The larger canister did all the cooking for a 4-day trip for two people in the Smokys last month.

I wouldn't use the Jetboil for more than boiling water for your food, hot drinks, or sterilizing water. It's hard to clean otherwise and there isn't a setting for simmer or low/medium heat. It's all or nothing. I've also read that the Jetboil pan cooking accessory doesn't work well with the Jetboil but I won't be trying that anyways as I also have a back up Snowpeak stove which works better in higer altitudes and for pot/fry pan usage. That being said I knew all of this before my purchase after reading the reviews. I'm very happy with my purchase. I am able to eat way before I would if I were using the traditional method of heating water for freeze dried products. It incredibly convenient for this purpose. Highly Recommended!Note: The can of gas itself comes in 2 different sizes and the size I bought here at EMS was the smaller of the 2. I didn't realize this before purchasing. I only noticed it while [...] seeing the 2 different sizes. I was happy though with my purchase as smaller is better for backpacking.

I took it with me up Mt. Whitney and it crapped out at 12,000ft. Two major factors can affect this canister as all canisters. Cold weather and altitude. The wind chill was at least 5* and we were at 12,000ft when it started to die. I would anticipate this before you go on a trip at high altitude or cold weather trip.

This fuel is made for the jetboil system and works best with it. In cold winter temperatures (below freezing)I've found it necessary to carry the canister in a pocket instead of my pack to keep it warm enough for efficient burning.

The small canister is nice in that it fits inside the Jetboil cooking system, making the overall cooking system very compact. I've used one canister for 3 full days of backpacking in mild weather (boiling approx 1 to 1 1/2 quarts of water per day), and it has not run out yet. Based upon the specs, I would expect it to last for at least another 2 or 3 days. The only downside to these is the difficulty judging how much fuel is left. That might be easier to determine after gaining some more experience with the stove under varying conditions. In the meantime, I will always carry a second full canister if going out for more than 1 night with a partially used canister.

I recently used this in a snowshoeing overnight trip in the Green Mountain National Forest in VT. February weekend, spent the night in a leanto--temps reached close to 0 overnight. I kept the fuel in my front shirt pocket under my coat while setting up the campsite and during the downtime before dinner. First attempt, the piezoelectric lighter caught the fuel but the flame puttered out after about 30 seconds. Second attempt, I opened the fuel valve more and more if I heard the stove struggling at all with the cold weather. With this, the flame kept going and boiled water for two dinners.
I didn't sleep with the fuel canister in my sleeping bag, just warmed it up in the morning. The piezoelectric lighter sent a visible spark, but did not ignite the flame after several attempts. No problem--I kept a bic lighter warm in the front pocket of my shirt. Used the lighter, fuel lit, slowly opened the valve all the way (despite other Jetboil user reviews there is SOME variable control on the fuel output). Stove worked perfectly--used the press and made some coffee.
I would wager that this is definitely a 4-season blend as long as you take the proper steps beforehand.
